Salads, anyone?

My daughter and I are on a salad kick. She is a total salad lover… as am I. Thankfully, my son and hubby like ‘em, too. I’m wonderin’ if anyone has any kickin’ salad recipes to share with me? I’d love to have something new to try… Anyone?

Wreaths & Rocky Road

Last installment of candy recipes. We have to visit with my in-laws tonight. They are having their Christmas, starting at 5pm. The husband won’t even be home from work at that time so we’ll get there when we get there. That may even be as late as 7-8! Eek. I look at it this way: if they didn’t want us to be late they should have made more effort to set a day and time he/we could attend (considering we told them, many times, his work hours and included Christmas Eve/Day was reserved already). they appeared to be more concerned with his sisters’ schedule.

No Bake Rocky Road Candy
Melt:
12 oz. chocolate chips
1 can Eagle brand milk
2 T. margarine
Pour over:
2 cups peanuts
10 ½ oz. minature marshmallows
Pour into 9X13 pan. Refrigerate for 2 hours. Cut into squares and store at room temperature. Induldge!

Next:

Christmas Wreaths
1 c. sugar
1 c. white syrup
1 c. peanut butter
4 c. corn flakes
Green food coloring [optional to make the flakes (wreath) green]
Cinnamon candies

Boil sugar ‘n syrup. Add peanut butter. Pour cornflakes in a bowl/baking dish, coat with mixture. Shape into round wreaths. Garnish with cinnamon candy.

Hard Candy & Potato Candy

If you aren’t in need of some yummy candy recipes… you should be! I haven’t baked or prepared much, actually - but wish I had more time to do so. I love makin’ goodies! I know one thing, I’ll have to make something extra yummy for Santa, I know she…I mean he…or is that we… I can’t lie - it’s me…. would love it! *drool*

Potato Candy
1 small potato
1 1/2 boxes powdered sugar (have 2 on hand)
1 tbsp. butter
1/8 c. milk
1 tsp. vanilla

Peel, cook and mash potato. Add butter and milk. Make sure no lumps remain. Add vanilla and powdered sugar, slowly. Knead and roll out. Put candy onto a sugared board and roll to about 1/4 inch thick (or whatever you desire). Spread a thin layer of peanut butter ontop. Roll the candy (make two rolls). Slice and refrigerate for 1 hour. Makes about 50 pieces, depending upon thickness of the slices. VERY sweet!

*If you don’t like peanuty butter, omit that. Other options include: toss in plastic bag with cinnamon (put the candy in a bag with cinnamon and coat it, them remove from bag!)or drizzle/cover/dip in chocolate.

Next:

Hard Candy
3 ¾ c. sugar
1 ½ c. white karo syrup
1 c. hot water
1 t. oil ( peppermint or cinnamon)
food coloring (red or green)

Boil water, sugar and syrup without stirring until 300 degrees (about 20 min.). Take off heat. When boiling stops, stir in oil and food coloring. Pour onto cookie sheet. When cool break in pieces and dust with powdered sugar.

For the next couple of days I will share a candy [or sweets] recipe with you, ’till Christmas. These are perfect for Christmas Goodies! Most recipes will be from my aunts collection - she usually makes them yearly. I collected her recipes a few years ago for myself!

Peanut Brittle
¾ c. light corn syrup
¼ c. sugar
2 T. margarine
1 c. salted peanuts
1/8 t. baking soda

Using a heavy 2 qt. saucepan stir the corn syrup, sugar ‘n margarine. Cook over medium heat until mixture boils. Watch closely and continue cooking until temperature reaches 280 [F] on a candy thermometer. Gradually stir in the peanuts. Continue cooking until mixture reaches 300 [F]. Stir in baking soda. Quickly pour mixture onto baking sheet. Break when cool. Makes about ¾ lb. Yum, double this recipe!
