Enjoy some Peanut Brittle!

For the next couple of days I will share a candy [or sweets] recipe with you, ’till Christmas. These are perfect for Christmas Goodies! Most recipes will be from my aunts collection - she usually makes them yearly. I collected her recipes a few years ago for myself!

Peanut Brittle
¾ c. light corn syrup
¼ c. sugar
2 T. margarine
1 c. salted peanuts
1/8 t. baking soda

Using a heavy 2 qt. saucepan stir the corn syrup, sugar ‘n margarine. Cook over medium heat until mixture boils. Watch closely and continue cooking until temperature reaches 280 [F] on a candy thermometer. Gradually stir in the peanuts. Continue cooking until mixture reaches 300 [F]. Stir in baking soda. Quickly pour mixture onto baking sheet. Break when cool. Makes about ¾ lb. Yum, double this recipe!

We are expecting snow showers Saturday night and on Christmas Day- I hope it happens!!! *cross fingers* Have a great day, everyone!

That looks really good. However, since I am SO behind on Christmas this year, not sure how much baking I will do. I’m going to save the recipe though. Yum!!! : )

    Hmmm…

It’s going to be 72 degrees and sunny here in L.A. for Christmas…again. Guess I’ll have to wear shorts and BBQ for the Holidays.

    *sigh*

Do you have photos of what the above recipe should turn out like?

P.S. I doubt it will snow here. Shorts and T-shirt weather!!

Replied: I don’t have one that I took but you may have a look here. Also, here it is covered in chocolate. If I make some this week I can photograph it ;) hehe
