Enjoy some Peanut Brittle!
For the next couple of days I will share a candy [or sweets] recipe with you, ’till Christmas. These are perfect for Christmas Goodies! Most recipes will be from my aunts collection - she usually makes them yearly. I collected her recipes a few years ago for myself!
Peanut Brittle
¾ c. light corn syrup
¼ c. sugar
2 T. margarine
1 c. salted peanuts
1/8 t. baking soda
Using a heavy 2 qt. saucepan stir the corn syrup, sugar ‘n margarine. Cook over medium heat until mixture boils. Watch closely and continue cooking until temperature reaches 280 [F] on a candy thermometer. Gradually stir in the peanuts. Continue cooking until mixture reaches 300 [F]. Stir in baking soda. Quickly pour mixture onto baking sheet. Break when cool. Makes about ¾ lb. Yum, double this recipe!

That looks really good. However, since I am SO behind on Christmas this year, not sure how much baking I will do. I’m going to save the recipe though. Yum!!! : )

Hmmm…
It’s going to be 72 degrees and sunny here in L.A. for Christmas…again. Guess I’ll have to wear shorts and BBQ for the Holidays.

that looks really good, i’ve never made candy before but I may have to give this one a try. I think we might get snow too! At least we better!
